The Difference Between Fruit Concentrates and Fruit Purees
They look similar on a spec sheet but behave very differently behind the bar. Here's how to choose.
Concentrates and purees are both built from real fruit, but they solve different problems. Knowing when to use each is a mark of a serious beverage operation.
What is a fruit puree
A puree is the whole fruit — pulp and juice — smoothed into a consistent texture, often with its natural fibre retained. Purees deliver body, colour and a rounded fruit character. They shine in smoothies, sauces and drinks where texture matters.
What is a fruit concentrate
A concentrate has had most of its water removed, intensifying flavour and sweetness in a smaller volume. Concentrates are efficient to store and dose, and they deliver punchy fruit flavour into clear or carbonated drinks without adding heavy body.
How to choose
- Want texture and mouthfeel? Reach for puree.
- Want intense flavour without body? Reach for concentrate.
- Building a sparkling or clear drink? Concentrate keeps it crisp.
- Building a smoothie or dessert? Puree gives structure.
Many premium menus use both — puree for body-forward drinks and concentrate for bright, refreshing builds. Matching the ingredient to the format is how you achieve professional, repeatable results.
